is an Italian dessert recipe, that consists in a sponge cake layered with a ricotta cream stuffing and chocolate.
In particular, this recipe comes from north Italy, where people prepare this dessert with an infinite variant of stuffing.
In this case we are using one of the most tasty and easier stuffing to prepare.
The ingredients to prepare this recipe are:
100 gr. Flour
160 gr. Sugar + 90 gr. For the stuffing
2 tbsp Cocoa Powder
100 gr. Potato or Rice Starch
500 gr. Ricotta
150 gr. Cream
1 Vanilla Bean
50 gr. Liquor of your choice in 600 gr. Water for soaking the sponge cake
To prepare this recipe:
At first, we need to prepare a sponge cake, that will be the base of our dessert.
Start by whisking the eggs, and incorporate the sugar while the eggs are mounting.
Scrape the seeds of the vanilla bean into the eggs and the sugar and continue to mount until the eggs become fluffy and start to foam.
Now add all of the starch and mix gently, paying attention to not break the foam and liquefy the mixture.
Once this step is done, do the same with the flour. Add it slowly and mix from the bottom to the top.
Oil a cake mold or grease it with butter, and pour the cake dough in it. Cook in preheated oven at 155°C for 60 minutes.
Once the cake is ready, allow it to become cold before taking it out of the mold.
In the meanwhile, we will prepare the stuffing of this cake:
Take two medium sized bowls and pour half of the ricotta in one and half in the other one.
Place half of the sugar in one bowl and half in the other one and in another large bowl whip the cream.
Divide the whipped cream in the two bowls and mix carefully as we did with the sponge cake.
In one of the bowls add all of the cocoa powder.
Remove the outer layer of the sponge cake and slice it horizontally to get three discs.
Soak each slice with the mixture of water and liquor.
Spread the stuffing inside each layer, and once you’re done place the cake on a dish, and cover with the leftover stuffing.
Also add some other whipped cream to glaze the Zuccotto.
Spread with cocoa powder and serve chilled.
