Taralli are a recipe famous all over the world, spicy and richly flavored savory biscuits. They are traditionally prepared once a month in the families of southern Italy.
The recipe comes from Puglia and is simple, even if it has fairly long preparation times.
Taralli are often consumed with ham and salami instead of bread.
The ingredients for 6 servings are:
500 gr. Flour
200 ml Extra Virgin Olive Oil
200 ml White Wine
A pinch of Salt
Black Pepper
20 Dried Onion
30 gr. Fennel Seeds
The process to prepare the Taralli is:
Create a fountain by placing the flour on the work table. In the center of the fountain pour water, the olive oil, the white wine and a pinch of salt.
Add the fennel seeds and the black pepper, then toss the dried onion in the dough.
nead until you get a smooth dough.
Roll the dough to form thin cords that you will cut at a distance of about 5 cm.
Take the ends, join them and form a ring, or roll them on themselves to form a spiral.
Fill a pot with water and add salt, then, a few at a time, boil the Taralli 5 at the time.
Leave them in the boiling water and take take them off the water once they came up to the surface. Place them on a cloth to dry overnight. This ensures that the Taralli will be friable and crispy.
The next morning if they are well dried, preheat the oven at 200°C and cook them for 15 minute, or until they’re golden brown.
Another way to prepare them is to add minced sausage or switch the wine with red wine instead of white wine.
Once the Taralli are cooked, they need to avoid air, since air makes them become more soft.
Taralli are best consumed with cold cuts and cheese.
