Clams are very common in Italy, and easy to find everywhere. There are many recipes that use clams as the main ingredient.One of these are the stuffed clams.
A nice, easy and mess-free recipe, amazingly tasty, and best suited for summer.
The first thing you’re going to notice when you prepare them is the beautiful smell.
The ingredients for 4 servings are:
1 Kg. Big Clams (Veraci Clams are the best option for this recipe)
100 gr. Breadcrumbs
35 gr. Parsley Leaves
The Clams Cooking Liquid
1 Garlic Clove
100 ml. Water
The process for this recipe is:
Rest the clams in cold water for 2 hours, sprinkle with salt, so the clams will clean themselves.
Rinse the clams to get rid of any dirt or sand and start pouring some olive oil in a large pan. Put over low heat and add the crushed garlic clove.
Fry for a minute. Add the clams and let fry for 10 seconds, then add 150 ml of unsalted Water, put a lid on the pan and let cook for about 3 minutes.
Take the lid off: the clams should start to open now if they’re not open yet.
Taste and season if needed, sprinkle with black pepper and strain the clams.
Keep the clams cooking liquid.
Remove the empty half off the shell of every clam, and lay the full half on a baking sheet.
Prepare the stuffing in a small bowl:
Put the breadcrumb in the bowl, add some olive oil and the clams cooking liquid.
Pour it slowly, and stir until it gets a smooth texture, but not thin.
Finely chop the parsley leaves and add them to the mixture.
Using a spoon, fill the clams with the stuffing and cook in a preheated oven for 20 minutes at 170°C or until they’re golden brown.
