Stuffed Artichokes are a popular Italian dish served in almost every family.

This recipe is born in Rome, and in Italy it is called "Carciofi alla Romana".

Stuffed artichokes are perfect as a starter or a great main course.

The ingredient for 2 servings are:

  • 4 Large Artichokes

  • 300 gr. Breadcrumb

  • 70 gr. Parmesan Cheese

  • 1 Garlic Clove Parsley Leaves

  • 2 Lemons

  • 40 gr. Extra-Virgin Olive Oil

  • Salt and Pepper

  • 10 ml. White vinegar

  • The process for this recipe is:

    The first thing we need to do is to make an acidulated water, to do it pour water inside a medium size bowl, cut the lemons in half and squeeze them in the water.

    Add 10 ml. of white vinegar.

    Take the artichokes now, cut the stem off, but make sure to leave 2 cm. of it.

    Trim the hard outer leaves, leaving intact the soft center of the artichoke. Use now a teaspoon to dig the center of the artichoke, and remove the fluff that is inside the center of the artichoke.

    Using your knife, cut around the stem, you need to expose the white edible part. That part is rich in flavour and soft as the artichokes hearth.

    Now lay the artichokes in the acidulated water.

    We now need to prepare the filling:

    Pour the breadcrumbs in a bowl, finely chop the parsley and the garlic and add them to the breadcrumbs.

    Toss in the Parmesan cheese and pour some olive oil inside.

    Mix well, then add salt and pepper. Proceed to fill the artichokes with this mixture using a spoon.

    Take a oven dish, cover it with baking paper and sprinkle with salt, black pepper and olive oil, the put the artichokes on it.

    Sprinkle a bit of Parmesan cheese on top so it will get a gratin effect, then, cook in preheated oven at 180°C for 20 minutes.

    You can also lay the artichokes in an oven dish or a pie dish, and cover with tomato sauce to obtain a delicious main course.
