This Pie is simple as it doesn’t need difficult processing, but it is tasty and resembles the Paradiso Pie in its texture, adding the sweetness and softness of the ricotta cheese.
Just make sure to follow the recipe, and you will get one of the most delicious pastries in Italy.
Ingredients for 6 servings are:
200 gr. Flour
220 gr. Ricotta Cheese
2 Big Eggs
170 gr. White Sugar
50 gr. Molten Butter (You can also switch it with vegetable seeds oil, in the same amounts)
100 ml. Milk
1 Orange Peel
1 Lemon Peel
5 gr. Baking Soda
1 Vanilla Sachet
The process to prepare this delicious pie is:
Take the ricotta out from the fridge, and start stirring it until it becomes really smooth, this is a very important thing to do in order to get a super soft pie.
Let the ricotta cheese reach room temperature.
Grate the orange and lemon peel in large bowl, and add the eggs. Start whisking to mount the eggs until they reach a fluffy consistence.
Add the sugar and continue to whisk for 5 minutes.
Melt the butter and pour it slowly in the eggs, continuing to whisk. At this point the dough should be loose but still not liquid.
Add a quarter of the flour and continue whisking, and when the dough starts to thicken add the rest of the flour, stirring gently to keep the most of the air inside the eggs.
Stir for 2 minutes and gently pour in, still stirring until it becomes smooth again.
Add the baking soda and the milk. Then grease the mold sprinkle with it flour, pour the dough and cook at 170° for 35 minutes.
Pay attention to the chilling, if you take the cake out of the mold while it is still hot, the pie will break, so wait until cold, the carefully take the pie out of the cake mold.
Serve sprinkled with powdered sugar, or decorated with whipped cream and sugar sprinkles.
