Pizzagaina, or Pizzachina
(literally stuffed pizza) is a typical southern-italian recipe, commonly prepared during easter, to celebrate the return of Jesus.
It has a thick crust and cold cuts and cured meats stuffing. Some work has to be done for this recipe but it will be worth it!
The ingredients for a 24 centimeters mold are:
For the dough:
500 gr. Flour
270 gr. Water
15 gr. Brewer’s Yeast
½ tablespoon of Salt
80 gr. Vegetable Seeds Oil
For the filling:
6 Eggs 140 gr.
Salami 150 gr.
Cured Ham 100 gr.
Unsalted Seasoned Sheep Cheese 200 gr.
Provolone Cheese 50 gr.
Parmesan Cheese 60 gr.
Bacon Seasoned Sheep Cheese
1.- The first thing to do is to knead the dough: put the flour in a large bowl. Mix the yeast with the water and then pour in the flour, then add the salt and the vegetable seeds oil.
2.- Knead until smooth and then let the dough rest in the bowl, covering it with a cloth for a couple hours.
Then we can start to prepare the filling:
3.- Cut the salami, the cold cuts and the cured meats in dices, then get a bowl and break the eggs in it.
4.- Add salt pepper and the seasoned sheep cheese.
5.- Mix the eggs with the cured meats, then add the rest of the cheese.
6.- Take the dough and cut in half, then roll out to 3 or 4mm and start covering the mold. Don't forget to grease the mold before you cover it with the dough.
7.- Pour the egg/meats mix into the mold, on the dough and cover it with the other half of the dough.
8.- Seal the borders well, then preheat the oven at 165°C.
9.- Proceed to grease the cover of the pizza with some other vegetable seeds oil, and cook at 165°C for 50 minutes.
When the pizza is ready, don’t take it out from the stamp until it has cooled down or it will break and ruin your work. Cut in slices to serve. This dish is usually served cold or room temperature.
