Southern Italy is the birthplace of the italian street food culture.

One of the most iconic cities that are famous for their street food is Naples.

Naples is mainly known for the pizza, but this recipe is a delicacy that has the name of the pizza but does not resemble it, except for its dough.

Pizza fritta is basically a fried pizza dough bundle stuffed with ham, cheese and tomato.

The ingredients to prepare this recipe are:

  • 400 gr. Semolina Flour
  • 150 gr. White Flour
  • 360 gr. Cold Water
  • 12 gr. Brewer’s Yeast
  • 15 gr. Salt
  • 1 tsp Sugar
  • 1 tbsp Olive Oil
  • 1 Can of Peeled Tomato or Tomato Sauce (not salted)
  • 150 gr. Shredded Cheese or Mozzarella
  • 150 gr. Sliced Ham
  • Recommended Equipment:

  • Kneader

  • To prepare this recipe, these are the steps to follow:

    1.- Start by pouring the semolina flour and the white flour together in the kneader, or in a large bowl, and start to mix them with the yeast.

    2.- Start to pour the olive oil and the sugar in it.

    3.- Add the water a little at the time, to get a homogeneous dough.

    Make sure to add the salt at the end.

    If the dough seems to be loose don’t worry, just continue to knead until the whole dough is smooth.

    4.- After that, place it on a floured large board or on the table, press the dough with your fingers to get a thick sheet of dough and then start to fold it over itself three time.

    It will become much resistant and less loose since we are developing the gluten mesh.

    5.- Place the dough inside a bowl and allow to raise for about 4 hours at 25°C.

    6.- Once the dough has leavened, take it off the bowl and start to cut it into 180 gr. Pieces.

    7.- Form a sphere with each of the pieces we got and place them on an oven dish.

    8.- Put to leaven again for 4 hours. Just like we did before.

    Now it’s time to prepare the stuffing:

    9.- Open the can of tomatoes and if you use peeled tomatoes blend them with a teaspoon of salt and one of sugar.

    If you use mozzarella allow it to drain and release its moisture.

    Get the driest mozzarella you can.

    At this point we are ready to prepare our pizza fritta.

    10.- Press the dough balls into discs and spread a bit of the tomato sauce in the center, then lay some cheese on it and the ham slice.

    11.- Take a finger and wet it into a glass of water, then spread the water on the edge of the disc, and close it to get a half circle.

    12.- Gently toss the pizza fritta inside a pot of very hot vegetable seeds oil and deep fry until they become browned.

    13.- Serve immediately and enjoy this tasty real Italian street food.
