These cookies are super easy and super fast to make. This simple recipe is loved by Italian children, since these are the cookies every grandmother prepare for her nephews. The original recipe comes from Genova, in northern Italy, where Pine trees grow better since the weather is more cold than other regions.
Pignoli Cookies are made of pine nuts and have a great texture, and the ingredients are easy to switch to get tasty variants.
The ingredients for the Pignoli Cookies are:
200 gr. Flour
100 gr. Sugar
80 gr. Vegetable Seeds Oil
1 Egg Yolk
200 gr. Pine Nuts
1 tsp. Baking Powder
The process to prepare this recipe is:
Start to mix together the powdered ingredients in a large bowl:
Mix the flour with the sugar, the baking powder, and the lemon peel.
Then pour the vegetable seeds oil and the egg yolk. Stir until you get a smooth mix, then add ¾ of the pine nuts and mix.
Form small cookies using your hand, and give the cookies a spherical shape.
Press the cookies on the remaining pine nuts to cover them.
Cook in preheated oven at 170° for 15 minutes. Pine nuts will be golden brown when the cookies are ready.
Let the cookies get cold before removing them from the oven dish.
You can also use butter instead of vegetable seeds oil, and you can add a bit of sugar to the recipe to enhance the golden colour of the cookies.
You can even try to use walnuts instead of pine nuts and you will get amazing walnut cookies as well.

Other variants have crushed pine nuts and uses butter and powdered sugar instead of the white one.
