Limoncello Cake is a pastry recipe made using a typical Italian liquor made of lemons.
It has a fluffy and tender texture, and it will melt in your mouth.
In this recipe I will also teach you how to prepare your limoncello at home, using a true Italian recipe.
The ingredients for the limoncello are:
1 Kg. Untreated Lemons
1 lt. Pure Alcohol (90°)
1,5 lt. Water
500 gr. White Sugar
To Prepare Limoncello:
Wash carefully the lemons, then peel them removing the white part. Keep the lemon peel.
Pour the alcohol inside a larger bottle, then add all of the lemon peels, and let sit in the dark for 15 days.
Drain the peels, and keep the alcohol that will now be yellow.
Melt the sugar in the water, and mix together with the lemon alcohol, then let it sit for 3 days.
The ingredients for the cake are:
200 gr. Flour
1 Vanilla Sachet
For the filling:
180 gr. Sugar
600 gr. Mascarpone
200 ml. Limoncello
120 gr. Powdered Sugar
2 Egg Yolks
Let’s make the cake:
Whip the eggs with sugar until we get a fluffy mix, then add the flour and the vanilla sachet, grate some lemon peel inside the mix to give extra flavour.
For last, add the baking soda. Mix gently to keep as much air as possible in the dough.
Pour the dough in a cake mold and cook in a preheated oven at 175°C for 35 minutes.
In the meantime let’s make the mascarpone and limoncello filling:
Whip the mascarpone and the sugar, then add the limoncello and stir until the cream is smooth.
When the cake is ready, let it cool, then take it out of the mold and cut it in half, so you can spread the cream inside. Decorate using Whipped cream. Grate some other lemon peel and sprinkle on the top of the cake.
Rest the cake at room temperature for 1 hour before serving.
This cake is great with tea.
