Italian wedding cookies, also called Russian tea cakes, are a simple pastry recipe that has a sweet almond note and a sugary shell that makes this cookies irresistible.
Try these cookies as a complement for a tea, or for a snack.
The ingredients for 10 cookies are:
150 gr. Butter
120 gr. Powdered Sugar
200 gr. Flour
40 gr. Almonds
50 gr. Powdered Sugar for the topping
1 gr. Salt
1 teaspoon Vanilla Extract
To prepare the cookies:
Start by leaving the butter at room temperature for 15 minute, we need the butter to be soft.
Crush and chop the almonds finely, then proceed by mixing the butter with the sugar.
Pour the vanilla extract on the butter, and mix well. Add the almond and the flour. Add the salt for last, and knead until the dough results smooth. Wrap in cling film, then chill in the fridge for 2 hours.
Doing so will allow you to make small spheres with your hands without melting the cookie dough.
When the cookie dough is chilled take it and cut it into strips, then cut it again into dices.
Use your hands to form little spheres of 15 gr. Each.
Let them rest in the fridge for another hour.
After 2 hours lay them on a baking sheet and cook in a preheated oven at 170°C for 15 minutes.
When they’re ready, sprinkle the cookies with the remaining powdered sugar.
You can make chocolate cookies by using 50 gr. of cocoa powder instead of 50 gr. of flour.
You’re also free to sprinkle with cinnamon or sugar sprinkles, or change the almonds to every kind of nuts you desire.
If you want you can play with different ratios of flour/butter to obtain a different texture.
More butter means a more friable cookie. More flour instead gives you a firm dough.
