600 gr. Potatoes
4 tbsp Dried Oregano Leaves
1 tbsp Chili Pepper Flakes
150 gr. Vegetable Seeds Oil
160 gr. Olive Oil
15 gr. Thyme

The process to prepare this recipe is:
1.- Take the potatoes and brush them to remove any dirt remaining on them, then wash thoroughly all of the potatoes.
2.- Cut them into wedges trying paying attention to not cut in different sizes, all of the potatoes need to be similar sized to ensure they’re cooked properly.
3.- Prepare a large bowl and place the potatoes in it, fill with water and let them rest and rinse for about half an hour.
The rinsing process will help to remove the excess starch, doing so will give a great result once the potatoes are cooked. They will be very crisp and crunchy.
4.- Place the potatoes in the oven dish, making sure to create just a single layer, cook in more times if you have not enough room in the oven dish.
5.- Mix the olive oil and the vegetable seeds oil together, then sprinkle it on the potatoes.
Don’t worry to put too much, potatoes will cook better and keep the flavors.
6.- Add a consistent amount of salt, pepper and the oregano.
7.- Sprinkle with the chili flakes and the thyme.
8.- Preheat the oven at 200°C and place the potatoes in the oven only when the oven is very hot, at the right temperature.
9.- Cook for 30 minutes or let them cook until they become golden brown.
Oven power may vary, that’s why it is important to check the cooking process every 10 minutes, to ensure you don’t burn your potatoes.
10.- They can be served as a side dish, such as made in Italy.
An alternative way to prepare this recipe is to just cook the potatoes in the oven, but just sprinkled with rosemary leaves and 1 clove of garlic.
Use just olive oil if you do the potatoes this way.
