Pastina in Italian mean Small Pasta. It is made in a simple way and served as a poor dish, families serve this kind of pasta to young and old people and every Italian eats it often.


Ingredients for 4 servings:

  • 300 gr. White Flour
  • 3 Whole Eggs
  • A pinch of salt
  • For an eggless pastina:

  • 300 gr. White Flour
  • 200 gr. Water
  • 1 Egg White

  • To prepare this pasta:

    We can put the flour on our table and spread it making a hole in the center.

    Add the three whole eggs, then start to kneading, don’t add water, it will become better as you knead it.

    When the dough is ready let it rest for one hour in the fridge.

    Start spreading it to a 1mm thin foil and cut it into 2mm*2mm squares.

    For the eggless pasta:

    Start the same as before, but add the egg white and slowly add lukewarm water, knead and add water as it starts to form, then add the salt. Continue to knead until the dough is ready, then again rest for 1 hour and then roll out thinly. Cut in squares. This kind of pasta is more fragile, so it tends to stick more.
