The Italian lemon cookies

The ingredients for 20 Lemon Cookies are:
100 gr of sugar
260 gr of flour
100 gr of sunflower oil
1 tablespoon of baking powder
The process to prepare Italian Lemon Cokkies is:
Add 260 g of plain flour to a bowl along with 100 g of sugar.
Grate the lemon peel and then squeeze all the juice from the same lemon and mix it.
Add the baking powder, one egg and 100 g of sunflower oil.
Use a kitchen helper to mix the ingredients well, until small crumbly pieces form. Use a slow speed first, then go up slightly.
Lay the pieces on a wooden board and knead gently until they come together. The crumbling parts can stick together again, as the oils from your hands will help bring it all together.
Preheat your oven to 180º C and line a flat cookie sheet with parchment paper.
Next, separate small pieces of the mixture, rolling each one in your hands to form a small ball.
Place each ball on the tray and crush them a little with your hands to form a cookie. Line them up so there is enough space between each one and they can grow slightly without touching.
Place the pan in the oven for 20 minutes at 180 degrees Celsius.
Once the lemon cookies are ready, remove them from the oven and let them cool for 10 minutes.
Sprinkle icing sugar on top and serve.
