The Chicken Pastina Soup is one of the most popular recipes in the whole Italy. It is one of the few recipes that every region of Italy cooks the same way.
Ingredients for 2 servings:
1 Celery Rib
200 gr. Chicken Breast
100 gr. Chicken Bones and leftover meat
200 gr. Pastina (200 gr. Flour and 2 Eggs)
1 Peeled Potato

The first thing we need to prepare for this recipe is the chicken stock:
Let’s start by peeling and chopping the onion and the carrot, then cut the courgette in two. Also peel the celery and chop it roughly.
Fill a pot with water, and add all the vegetables to it, add the chicken bones, put over low heat, add some salt and let cook for as long as possible, from 1 to 3 hours.
In the meantime prepare the pastina by kneading 200 gr. of white flour and 2 eggs, roll and cut into little squares.
When the stock is ready strain it and remove the vegetables and the chicken bones but keep the carrot and the potato, cut them into pieces, then add salt if needed and put again on medium heat. Take the chicken breast and cut it into small dices. When it is boiling add the pastina and the chicken to it.
The pasta will be cooked in about 5 minutes, serve hot and garnish with some minced parsley leaves.
