Italian people are famous for their cutlets.
Today we will discover different recipes and ways to prepare delicious
Italian cutlets.
There are two kind of cutlets we are going to see today and they are:
Cutlets Palermitana (from Palermo, main Sicilian City)
Cutlets Milanese (from Milan, Main city of Piemonte Region)
The ingredients for this recipe and its variants are:
Cutlets Palermitana:
4 Chicken Breast Slices
4 tbsp Olive Oil
300 gr. Breadcrumbs
30 gr. Chopped Parsley
1 Garlic Clove
Salt and Pepper
Cutlets Milanese:
4 Chicken Breast Slices
3 Eggs
150 gr. Flour
300 gr. Breadcrumbs
Salt and Pepper
To prepare these recipes
Let's start with the Cutlets Palermitana:
1.- Take the chicken breast slices and place them on a large tray.
2.- Sprinkle them with olive oil, salt and pepper and let them rest there.
In the meanwhile, prepare the breading:
3.- Mix the breadcrumbs with the garlic, a pinch of salt and pepper and the parsley.
4.- Take the slices we prepared earlier and toss them in this breading.
5.- Press them well so that the breading will stick to the chicken slice, and lay them in an oven tray.
6.- Cook in the preheated oven at 200°C or BBQ them care so that the breading does not come off.
To prepare Cutlets Milanese:
1.- Break the eggs in a container large enough to fit the chicken breast slices, then beat them with a fork and add a pinch of salt and pepper.
2.- In a medium sized dish pour all of the flour.
3.- In the last container place the breadcrumbs.
4.- Toss the chicken breast slices in the flour first, then dip them in the beaten eggs.
5.- Lastly, place them in the breadcrumbs.
Press them hard enough to stick thee breading to the cutlets.
6.- Let them rest for 20 minutes in the fridge.
7.- Proceed to deep fry the cutlets in vegetable seeds oil, until they turn golden.
Both can be served with fries and green salad.
