Grandma’s Italian wedding soup is a main course made with meatballs and a tasty broth.
It is cooked through the whole Italy especially in winter time.
The meatballs are made of pork meat.
The ingredients for 2 servings are:
1 Celery Rib
200 gr. Chicken Bones
400 gr. Pork Minced Meat
100 gr. Parmesan Cheese
50 gr. Breadcrumbs
1 Garlic Clove
150 gr. Pastina or any other small sized pasta
1 Potato (big size is better)
To prepare this recipe:
1.- At first we need to prepare a chicken stock, so we peel the onion, we peel the celery and the carrot and we proceed to toss them in a large pot.
2.- Now we can fill the pot with water, and we can add the chicken bones.
Put over low heat and simmer for 2 hours.
In the meantime, let’s make the meatballs:
3.- Break the egg in a large bowl, add the pork meat and the chopped parsley.
Season with a pinch of salt and a pinch of black pepper.
4.- You can now add the breadcrumbs and a sprinkle of olive oil.
5.- Crush and finely chop the garlic clove and add it to the mixture too.
6.- Mix until you get a smooth texture, then keep it in the fridge.
7.- After 20 minutes in the fridge you can make small meatballs using your hands, and lay them on a baking sheet. Season with salt and pepper and sprinkle a bit of olive oil. Cook in preheated over at 175°C for 10 minutes.
After 2 hour, strain the chicken stock and keep the carrot.
8.- Cut the potatoes and the courgette in small dices, then put the stock again on medium heat. Cook for 10 minutes, finally add the pasta, the potato, the courgette and the carrot.
Let it cook for 12 minutes.
9.- Toss the meatballs inside the chicken stock at 6 minutes from the end and serve hot.
10.- You can also cook the meatballs in the chicken stock, to save time.
Simply cook them with the pasta.
