Frittelle Recipe - Italian Carnival fritters

This fried dessert is served in Italy only at one time during the year: the carnival.

During carnivals month, an Italy-wide famous dessert is prepared and it’s the carnival Frittelle.

A deep-fried strip of dough made with a few ingredients and topped with sugar, chocolate or cinnamon.


The ingredients to prepare this recipe are:

  • 400 gr. White Flour
  • 60 gr. Butter
  • 60 gr. Sugar
  • 20 gr. Vodka
  • 4 Eggs
  • Vanilla
  • 30 gr. Vegetable Seeds Oil
  • 10 gr. Baking Powder
  • Vegetable Seeds Oil for deep-frying


  • To prepare this dessert, these are the steps to follow:

    1.- Pour the white flour and the sugar in the kneader, and start to mix them up.

    2.- Add the baking powder, then the vanilla.

    3.- Pour 30 gr. Of vegetable seeds oil in the mix, then add the vodka.

    4.- Now add the eggs and the butter, and mix until you start to get a smooth dough.

    If the dough is still too hard, add 2 tbsp of water.

    5.- Wrap the Frittella dough in the cling film, and let it rest at room temperature for 1 hour.

    Now let’s move to the second part of the recipe.

    6.- Let’s start by pouring 600 gr. Of vegetable seeds oil into a large sized pan or pot.

    7.- Then take the Frittella dough and start to roll it out to form a 5mm thick layer.

    8.- Using a knife, cut out long strips from, 2*6cm are the standard measure in Italy for this dessert.

    9.- Shake the excess flour off the strips, and deep fry them in the vegetable seeds oil we warmed up earlier.

    10.- Cook until they turn golden, and after they are out of the oil, dab them with a paper tissue, then sprinkle with powdered sugar.

    11.- Melt the chocolate over low heat.

    12.- Drip the chocolate all over the cooked Frittelle.

    Serve still hot.

    They can be stored for 5 to 7 days, and they don’t need to get warmed up again. Just like cookies.
