During summer Italian people often cook a light but delicious main course, prepared using beef and stuffing it with pine nuts, mozzarella, ham, raisins, breadcrumbs, garlic and parsley.
Italian people also love to cook these Braciole on the grill or fried, without the tomato.
Any leftover tomato sauce is always used to prepare a pasta dish.
Ingredients for 2 servings:
4 Large Slices of Beef
50 gr. Baked Ham
2 Eggs
30 gr. Mozzarella
1 Can of Tomato Sauce (about 400 gr.)
30 gr. Pine Nuts
30 gr. Raising
80 gr. Breadcrumbs
30 gr. Parsley
2 Garlic Cloves
40 gr. Parmesan Cheese
Half Onion
100 ml. White Wine
To prepare this recipe:
Slice the onion after peeling it and start frying it in a pan with a little olive oil, then pour the tomato puree into it.
Let it cook for 20 minutes.
In the meantime, cut the mozzarella into cubes and roughly cut the ham, chop the parsley and the garlic and mix everything together in a large bowl.
Add the breadcrumbs, the parmesan cheese and a sprinkle of olive oil to the mixture. Season with a pinch of salt and pepper and mix well.
At the end add the pine nuts and raisins.
Break the eggs in another bowl, large enough to dip in the beef slices, and beat with a fork until the eggs become homogeneous.
Dip the beef in the beaten eggs and then proceed to cover it with breadcrumbs.
Lay them flat, and spread the filling we made before on the beef, then roll it and stop it with a toothpick to keep the shape.
Heat some oil in a large pan, and put the rolls in it and start to fry.
Add the white wine, and then pour the tomato sauce on it and allow to cook for 30 minutes.
If after that time the sauce is still thin, take off the lid and let it cook until thick.
Season with salt and pepper, and serve hot garnished with crushed potatoes.
