This is a recipe that yells "Summer". It’s a fresh and crisp cake, a delicious variation of the classic cheesecake, made using bananas.
This recipe in Italy is also called "Bavarese alla Banana". This is a simplified version of a Bavarese, so it’s easy to prepare at home, mess-free.
The ingredients for this Cheesecake are:
300 gr. Digestive Cookies
200 gr. Butter
600 gr. Spreadable Cheese
400 gr. Banana Yogurt
120 gr. Dried Banana Chips
300 gr. Sugar
20 gr. Gelatin Sheets
40 gr. Water
200 gr. Cream
The process to prepare this recipe:
Take the cookies, wrap them in a towel and crush them finely with using a rolling pin, then toss them in bowl.
Melt the butter on low heat and pour it on the cookies while stirring them.
Place a baking sheet on the base of the cake mold, grease the sides of the mold and start by pouring the cookies and butter mix inside it.
Use your hands to level the cookies add push them as we need a firm base for our cheesecake.
Place the cake mold in the fridge for 1 hour, and proceed with the banana cream.
Whip the cream, and when it starts to incorporate air, add the spreadable cheese and the sugar.
Blend the bananas with the yogurt.
Mix together the cream, yogurt and cream cheese.
Dissolve the gelatin sheets in lukewarm water, then add it to the bowl with our banana cream.
Stir gently to melt the gelatin.
Take back the mold from the fridge, pour the banana cream on the cookie base and use a spoon to even the surface of the cheesecake.
Use dried banana chips to decorate the top of the cheesecake. You may also want to use a chocolate topping, spread it on the cheesecake before you place the dried banana chips on top.
Let the cheesecake rest in the fridge for 4 hours at least, then serve cold.
