Arancini literally means 'small oranges' and this name comes from the similarity of the recipe with the oranges.
It is a top-tier recipe in Sicily and it consists in small fried rice balls filled with minced meat, mozzarella and peas.
Ingredients for 2 servings are:
300 gr. Carnaroli Rice
100 gr. Minced Meat
50 gr. Baked Ham
50 gr. Peas 50 gr. Mozzarella
100 gr. Tomato Sauce
300 gr. Flour
200 gr. Bread Crumbs
2 Sachets of Saffron (0.2gr.)
We can now proceed to prepare it:
At first we need to start by preparing a minced meat sauce. We cut the onion in small dices, and we fry them in a skillet with some olive oil. Then we add the minced meat, and a pinch of salt and we cook until all the meat starts to look roasted. We can now add the tomato sauce and the peas, let it cook over low heat for 1 hour.
When the meat is ready we can cook the rice in boiling salted water for 10 minutes, then we drain it and cool it down. After resting spread the rice in a large bowl and mix it with the saffron, the rice should become orange.
You need to chop the mozzarella and the Ham to small pieces. The we can finally move on to the arancini making part:
Wet your hands with some water so the rice won’t stick to your finger, and take a handful of rice, spread on you hand, while you keep it wide open, the add one spoon of the minced meat sauce, some of the mozzarella and the baked ham. All in the center of the spread rice. Now start to wrap the rice around the filling by closing your hand and creating the shape you desire, usually a cone, but can be made as spheres.
You can make small arancini or bigger ones, the recommended size is almost 300 gr. each one. Put the arancini in the fridge, and start whisking together flour and water, add the egg and you should get a batter that is not too thick, but enough to cover the back of a spoon. Submerge the arancini in this batter, then cover them instantly in the breadcrumbs.
Deep Fry the arancini until they become Golden. Serve Hot.
