One of the most prepared dessert in Italy is the apple pie
Most of the times the apples used in this cake come from the garden of each family, this explains why this recipe is so important and how it became traditional.
There are many ways to prepare this cake, each one featuring different doughs and ingredients along with the apples.
The ingredients needed for this recipe are:
For the dough:
1 kg Flour
600 gr. Butter
1 tsp Vanilla Extract
1 Lemon Peel (grated)
400 gr. Sugar
For the stuffing:
1 kg. Red Apples
300 gr. Sugar
100 ml Lemon Juice
40 gr. Brown Sugar
1 tbsp Cinnamon Powder
To prepare this recipe:
Start by taking a bowl, fill with water and place ¾ of the lemon juice in it.
Peel all of the apples and cut them into wedges.
Place the apple wedges in the acidulated water and let them rest in the fridge until we’re ready with the dough.
To prepare the dough we need to mix the sugar with all of butter.
Make sure to work the sugar and the butter fast, or the butter will melt and the recipe will become more difficult.
Once the sugar is well mixed with the butter, add one egg at the time, and mix the dough well before adding the next eggs.
Now your dough should be very loose, and it’s time to add the flour.
It may seem too much, but go on and add all of the flour.
Start kneading, and after a while the dough will be ready.
Wrap it into cling film and let it cool down in the fridge for 1 hour.
Spread some butter in a cake mold, then proceed to press the cake dough into a half centimeter thick sheet, cover the cake mold and make sure to not leave any gap or holes.
Now strain the apples we prepared earlier, and add them into the cake.
Leave some for decoration.
Add all of the white sugar on the apples and mix to make sure the sugar reaches every corner of the apple stuffing.
Do the same with the cinnamon.
Cover with another sheet of cake dough, and make a small hole on the center of the cake. Just on the top.
Now press the top of the cake to have a homogeneous layer.
Place the remaining apple wedges to decorate the cake, and before cooking the cake, sprinkle the brown sugar on top.
This will create a thin sugary crust over the apples on the top.
Cook in a preheated oven at 155°C Until the apples start to golden or at 160°C, for 40 minutes.
Let the apple pie cake cool down before taking the cake mold off, so the cake won’t break.
